Ingredients For rellenos de roquefort

12 lgeggs

2 1/4 ozroquefort cheese, crumbled

6 Tbspmayonnaise

1 bunchwatercress

1 Tbspchopped fresh parsley

salt and pepper, to taste
How To Make rellenos de roquefort

1Fill pan with water and heat to boiling.

2Add eggs to boiling water and cook for ten minutes.

3Drain hot water and fill pan with cold water and ice cubes.

4When eggs are cool, peel carefully.

5Cut eggs in half, removing the yolks to a separate bowl.

6Mash up yolks completely.

7In the bowl of the yolks, add the crumbled Roquefort cheese, mayonnaise, parsley, chopped watercress and mash all ingredients together.

8Add salt and pepper to taste.

9Fill the egg whites with the paste. Garnish with watercress leaves.
