Another delicious huevos rellenos recipe.

Ingredients

  • 12 large eggs
  • 2 1/4 ounces roquefort cheese, crumbled
  • 6 tablespoons mayonnaise
  • 1 bunch watercress
  • 1 tablespoon chopped fresh parsley
  • - salt and pepper, to taste

How To Make rellenos de roquefort

  • Step 1
    Fill pan with water and heat to boiling.
  • Step 2
    Add eggs to boiling water and cook for ten minutes.
  • Step 3
    Drain hot water and fill pan with cold water and ice cubes.
  • Step 4
    When eggs are cool, peel carefully.
  • Step 5
    Cut eggs in half, removing the yolks to a separate bowl.
  • Step 6
    Mash up yolks completely.
  • Step 7
    In the bowl of the yolks, add the crumbled Roquefort cheese, mayonnaise, parsley, chopped watercress and mash all ingredients together.
  • Step 8
    Add salt and pepper to taste.
  • Step 9
    Fill the egg whites with the paste. Garnish with watercress leaves.
