Ingredients

  • 6 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cans low-sodium beef broth (14.5 oz each)
  • 1 sprig fresh rosemary
  • 3 - 4 sprigs fresh thyme
  • 1 tablespoon Better Than Bouillon roasted vegetable concentrate
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground nutmeg
  • pepper to taste
  • 3 tablespoons corn starch
  • 2 tablespoons cold water
  • 2 pounds frozen french fries
  • 1 - 1 1/2 cups white cheddar cheese curds
  • 1 gallon oil for frying (optional depending on preferred cooking method)

How To Make poutine

  • Step 1
    In a large saucepan over medium heat, melt the butter. Add the flour and cook, stirring constantly for about 5 minutes until the mixture turns golden brown.
  • Step 2
    Add the beef broth, bouillon, seasonings, and herbs. Bring to a boil, stirring constantly. Reduce the heat and simmer for 10 - 15 minutes, stirring regularly.
  • Step 3
    Remove rosemary and thyme sprigs or run gravy through a fine mesh sieve to remove all solids. Return gravy to the pot.
  • Step 4
    Whisk in about HALF the corn starch mixture and simmer for a minute or so. If you'd like your gravy thicker, add more of the cornstarch mixture in small increments to thicken as desired.
  • Step 5
    Prepare fries according to package directions using your preferred cooking method. Season with salt as desired.
  • Step 6
    Place fries on a plate and top with cheese curds. Ladle gravy generously over curds and fries. Serve and enjoy.
