These are great with a little salsa added before the sour cream. Makes a great party appetizer or even a light meal when served with a salad. Kids love these too!

Ingredients
- 5 - baking potatoes
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded jack cheese
- 5 slices bacon, cooked crisp and crumbled
- 2 tablespoons green onion finely chopped
- - sour cream for topping
How To Make potato skins stuffed with cheese & bacon

Step 1Bake potatoes @ 500 degrees for 1 hour or until fork tender. Cut potatoes in half and scoop out centers, leaving a 1/4" thick shell. Cook skins in hot oil (400 degrees) or 400 degree oven if you don't want to fry until slightly crisp and golden brown. If frying, drain well on paper towels. Season to taste with salt and pepper. Fill each potato half with some of the crumbled bacon, green onion, and both cheeses. Place under broiler to melt cheese. Top each with a dollop of sour cream. Yields 10 servings
