fresh portabello mushrooms stems removed
cheddar cheese, shredded (or cheese of your choice)
green bell pepper (finely diced)
How To Make
gently wipe down mushrooms, and place on a rack and put in either the oven or broiler till the mushrooms release thier juices
once almost fully cooked, line mushrooms with pepperoni and bell peppers (or any kind of filling of your choice)
top mushroom caps with shredded cheese (of your choice) and drizzle with olive oil
Put back in oven for a few minutes to melt the cheese, once fully cooked take out and serve as is or with your favorite dish
