How to Make Pepper Jelly
- Combine the sugar, minced peppers and vinegar in a deep 2 1/2 to 3 quart microwave safe bowl.
- Microwave on HIGH for 8 minutes.
- Stir in the pectin and microwave on HIGH for 2-2 1/2 minutes. Skim off foam.
- Pour into sterilized jelly jars or freezer containers. Cover with lids.
- Invert for 1 to 2 hours to disperse peppers.
- Refrigerate up to 3 weeks or freeze up to 1 year.
