Ingredients

  • 1 French bread, cut into 4 pieces
  • 2 tablespoons butter
  • 1 pound mushroom, sliced
  • 1/2 pound Shiitake mushroom, sliced
  • 1 small shallot, chopped
  • 1/4 cup sherry
  • 2 cups heavy cream
  • 1 cup Gruyere cheese, shredded
  • 1 tablespoon lemon juice
  • salt and pepper
  • paprika
  • fresh basil for garnish

How To Make mushroom and gruyere toasts

  • Step 1
    Cut the bread in half and hollow out the insides a bit. Place the bread on a baking sheet and toast in a 350-degree oven for about 5 minutes
  • Step 2
    Melt the butter in a saucepan and add both mushrooms, and season with salt. Cook until the mushrooms have given up their moisture.
  • Step 3
    Add the shallots and cook 3 more minutes. Stir in the sherry and heavy cream and bring to a boil, and reduce to a simmer.
  • Step 4
    Add the cheese and let it melt and thicken the sauce. Add the seasoning and lemon juice.
  • Step 5
    Spoon the mixture into the toasted bread and garnish with basil.
