Ingredients
- 1 French bread, cut into 4 pieces
- 2 tablespoons butter
- 1 pound mushroom, sliced
- 1/2 pound Shiitake mushroom, sliced
- 1 small shallot, chopped
- 1/4 cup sherry
- 2 cups heavy cream
- 1 cup Gruyere cheese, shredded
- 1 tablespoon lemon juice
- salt and pepper
- paprika
- fresh basil for garnish
How To Make mushroom and gruyere toasts

Step 1Cut the bread in half and hollow out the insides a bit. Place the bread on a baking sheet and toast in a 350-degree oven for about 5 minutes

Step 2Melt the butter in a saucepan and add both mushrooms, and season with salt. Cook until the mushrooms have given up their moisture.

Step 3Add the shallots and cook 3 more minutes. Stir in the sherry and heavy cream and bring to a boil, and reduce to a simmer.

Step 4Add the cheese and let it melt and thicken the sauce. Add the seasoning and lemon juice.

Step 5Spoon the mixture into the toasted bread and garnish with basil.
