I had these in a mexican restaurant once and wanted to try to make them. I dont know if I got it right but everyone loves them. You will too once you try them!

Ingredients

  • ·
    8 jalapenos
  • ·
    1/2 tsp minced garlic
  • ·
    1/2 tsp mrs dash table blend
  • ·
    12oz. tub pico de gieo
  • ·
    block of pepperjack cheese
  • ·
    egg roll wrappers
  • ·
    16oz can refried beans
  • ·
    1 tbs butter
  • ·
    oil for frying

How to Make Mexican Egg Rolls

Step-by-Step

  1. Chop the Jalapenos into small pieces and remove half the seeds or to taste.Cook in a pan with butter, add Garlic and Mrs Dash until tender.
  2. Add Pico and continue to heat on medium.
  3. In a seperate pan heat beans until hot
  4. Cut cheese into strips 1/4" by 4"
  5. On each egg roll wrap add 2Tbs beans and 2Tbs Pico mix. Add 1 cheese slice and wrap making sure all corners are folded in and completely sealed. A drop of water on your finger wll "glue"it shut
  6. Heat the oil to about 350 and deep fry until golden brown. Enjoy! They are so good!!!
