I made this favorite dish of my late wife,Peggy,I hope I did her justice,it was the hit of the party.The recipe is from an old cookbook from a church in Beaumont,Texas.Hope you all enjoy.

Ingredients

  • 1 3/4cups - corn bread mix
  • 1bunch - green onions chopped
  • 1 - medium yellow onion chopped
  • 1 - small bell pepper chopped
  • 3 - jalepenos chopped
  • 2 - eggs
  • 8 oz. - sour cream
  • 1 - small can creamed corn
  • 1/2 lb. - lean hamburger browned
  • 6 slces - american cheese
  • pinch - salt
  • pinch - ground black pepper

How To Make mexican cornbread

  • Step 1
    Mix together all ingredients except meat and cheese.
  • Step 2
    Pour 1/2 mixture in large skillet pan.
  • Step 3
    Add layer of all meat and cover completly with cheese.
  • Step 4
    Top with remaining mixture and bake at 425 degrees for 35-40 minutes,to a light golden yellow,stick a fork in the middle,if it comes out clean,you're ready.
