I made this favorite dish of my late wife,Peggy,I hope I did her justice,it was the hit of the party.The recipe is from an old cookbook from a church in Beaumont,Texas.Hope you all enjoy.

Ingredients

1 3/4cups
corn bread mix
1bunch
green onions chopped
1
medium yellow onion chopped
1
small bell pepper chopped
3
jalepenos chopped
2
eggs
8 oz.
sour cream
1
small can creamed corn
1/2 lb.
lean hamburger browned
6 slces
american cheese
pinch
salt
pinch
ground black pepper

How to Make Mexican Cornbread

Step-by-Step

  • 1Mix together all ingredients except meat and cheese.
  • 2Pour 1/2 mixture in large skillet pan.
  • 3Add layer of all meat and cover completly with cheese.
  • 4Top with remaining mixture and bake at 425 degrees for 35-40 minutes,to a light golden yellow,stick a fork in the middle,if it comes out clean,you're ready.
