Traditionally bruschetta has Italian flavors, but Vera's twist is delicioso! The cilantro and diced pepper definitely give it a Mexican flare. It's super refreshing and on the spicy side. A simple appetizer for your summer parties.

Ingredients
- 5 - chopped tomatoes
- 8 or more - slices of French or Italian bread toasted or grilled
- bunch cilantro, fresh finally chopped
- 2 cloves garlic
- - olive oil
- - hot red pepper or jalapeno
- - salt to taste (about 1/2 tsp)
How To Make mexican bruschetta

Step 1Finely chop the tomatoes, garlic, hot red pepper (or jalapeno), and cilantro. If fresh red pepper is not available, red pepper powder will do.

Step 2Place in a bowl. Add oilve oil and salt.

Step 3Grill or toast the sliced bread.

Step 4Place some tomato mix over the bread and serve immediately to avoid the bread becoming soggy.

Step 5Garnish with cilantro leaves. Yum!
