skined chicken thighs cut into 1 1./2 in pieces


1In a medium saucepan combine marin,sake, sugar, ginger, garlic and soy sauce brind to a boiland cook till sugar has dissolved qand sauce has thickened slightly about 8 min
2Place chicken in a large bowl pour marnadeover it and turn to coat chill at least 1 hour and up to 3
3Prepare charcoal or gas grill for medium heat 350-450 you canhold your hand 5 inches above cooking grate 5-7 seconds thresd chicken on to schewers transfer marinade into a small sauce pan and boil on high heat until it has the consistency of barbecue sauce about 15 min
4Grill skewers (cover if using gas) basting with thickened marinade and turning frequently to prevent scorching until chicken ia carmelized and no longer pink about 6 minutes serve with remaining sauce on the side
5I prefer to use chicken breast not the skewers they catch fire you are supost to soak them for 30 min but that don't seem to help serve with rice and enjoy. I also like the grill pan fry or oven does not work barbecue grill is the best way to go
