ivan's bread salad (gazpacho)

This was taught to me by my dad (Ivan)it is meant to be eaten as an appetizer...really garlicky and tasty...

Ingredients

  • 1/2 - loaf of "day old" bread ( cuban)
  • 1/2 cup water to moisten
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • 1/2 - cucumber, diced
  • 1 - tomatoe, diced
  • 3 - garlic cloves, smashed
  • 1/4 cup onions, diced
  • 1/4 cup roasted red peppers
  • - salt & pepper to taste

How To Make ivan's bread salad (gazpacho)

  • Step 1
    in a large bowl, crumble bread and soften with the water
  • Step 2
    add all the other ingredients, mix well
  • Step 3
    let sit in refrigerator..preferably overnight, for all the flavors to come together....so fresh, delicious and garlicky...
