ivan's bread salad (gazpacho)
This was taught to me by my dad (Ivan)it is meant to be eaten as an appetizer...really garlicky and tasty...

Ingredients
- 1/2 - loaf of "day old" bread ( cuban)
- 1/2 cup water to moisten
- 1/4 cup olive oil
- 1/4 cup vinegar
- 1/2 - cucumber, diced
- 1 - tomatoe, diced
- 3 - garlic cloves, smashed
- 1/4 cup onions, diced
- 1/4 cup roasted red peppers
- - salt & pepper to taste

Step 1in a large bowl, crumble bread and soften with the water

Step 2add all the other ingredients, mix well

Step 3let sit in refrigerator..preferably overnight, for all the flavors to come together....so fresh, delicious and garlicky...
