impossibly good fruitcake miniatures
I have never liked fruitcake even though my mother would give me one every year! I decided to try to come up with a recipe that would incorporate the fruitcake idea into a more edible cake-like compotent for an appetizer for my Christmas parties. This seems impossible but true - a fruitcake that tastes very good!

Ingredients
- 1 1/2 cups flour, all purpose
- 1 1/2 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 6 large eggs, beaten
- 3 teaspoons vanilla
- 1 pound fruit mix, candied
- - chopped pecans - as desired

Step 1Preheat oven to 325 degrees. Line small(midget) cupcake pan with liners. Combine all ingredients; mix thoroughly. Spoon approximately 1 heaping teaspoon into baking cup liners.

Step 2Bake between 20-25 minutes or until wooden pick inserted in center comes out clean. Cool completely. Wrap securely in plastic wrap or aluminum foil; store in refrigerator.
