hot and spicy hush puppies
The first time I made this a couple of years ago, I wondered how this was going to turn out. It turned out good the first time, and then every time after that. I love it, and I hope you will too.

Ingredients
- 1 cup yellow cornmeal
- 3/4 cup self-rising flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon cayenne pepper
- 1/2 - small, sweet onion, finely chopped
- 1/2 - jalapeno, finely chopped
- 4 - green onions, sliced thin
- 1 - large egg, beaten
- 1/4 cup grated cheddar
- 1 cup buttermilk
How To Make hot and spicy hush puppies

Step 1Preheat deep fryer to 375 degrees F. (If you don't have a deep fryer, you can use a cast iron skillet, or a deep-sided electric skill or even a pot with oil, just check the temperature of the oil with a thermometer)

Step 2Mix all the ingredients together into a large mixing bowl to form a thick batter.

Step 3Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. ( You can skip this part if you want, and just use a flatware tablespoon and scoop the batter into the oil).

Step 4Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray.

Step 5*Note* You don't have to add the jalapeno unless you want to. It will still taste good with the other ingredients.
