garlic tomato brueschetta
This is a great recipe to use those fresh summer herbs and veggies from the garden or market. Serve it with your favorite toasted French Bread.

Ingredients
- 1/4 cup olive oil, extra virgin (you can use canola oil)
- 3-4 tablespoons fresh basil, chopped
- 3-4 - cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 - medium diced tomatoes
- 2 tablespoons parmesan cheese
- - your favorite french bread, toasted
- 1-2 tablespoon finely chopped onion, optional
How To Make garlic tomato brueschetta

Step 1In bowl, combine oil, basil, garlic, salt and pepper and onion, if you choose to add them. Add tomatoes, toss gently, sprinkle with cheese. Regrigerate for 1 hour. Bring to room temp before serving. Lightly toast bread. Top with tomato mixture. Serve immediately.
