Garlic Tomato Brueschetta

This is a great recipe to use those fresh summer herbs and veggies from the garden or market. Serve it with your favorite toasted French Bread.

1/4 c
olive oil, extra virgin (you can use canola oil)
3-4 Tbsp
fresh basil, chopped
cloves garlic, minced
1/2 tsp
1/4 tsp
black pepper
medium diced tomatoes
2 Tbsp
parmesan cheese
your favorite french bread, toasted
1-2 Tbsp
finely chopped onion, optional

How to Make Garlic Tomato Brueschetta


  • 1In bowl, combine oil, basil, garlic, salt and pepper and onion, if you choose to add them. Add tomatoes, toss gently, sprinkle with cheese. Regrigerate for 1 hour. Bring to room temp before serving. Lightly toast bread. Top with tomato mixture. Serve immediately.
