easy cucumber tea sandwiches

My friend's mom made these any time there was a reception, tea or other festivity. She used plain, whipped or softened cream cheese. I upped the ante by using flavored cream cheese, but suit yourself! It is not necessary to hold your baby finger out whilst eating these!

Ingredients For easy cucumber tea sandwiches

  • 1
    loaf of cocktail rye - the square kind that is most easily found around christmas
  • 8 oz
    tub onion and chive or garden vegetable soft cream cheese spread
  • 1
    cucumber
  • 1
    onion, thinly sliced (optional)
  • dried dill weed or herbal sprinkles (pennzey's fox point, sunny paris, or the like)

How To Make easy cucumber tea sandwiches

    Slice cucumbers into 1/8 inch circles using a mandoline. You can cut them by hand, they are more uniform and quicker using a mandoline. Place cucumber slices in a bowl and set aside.

    Spread a layer of cream cheese on each slice of bread.

    Pat the cucumber slices dry with paper toweling. Depending on the size of your cuke, lay 1 or 2 sliced of cucumber on the bread. Add a bit of thinly sliced onion, if desired.

    Sprinkle with dill or herb seasoning. You will need to make these shortly before serving.
