easy cucumber tea sandwiches
My friend's mom made these any time there was a reception, tea or other festivity. She used plain, whipped or softened cream cheese. I upped the ante by using flavored cream cheese, but suit yourself! It is not necessary to hold your baby finger out whilst eating these!

How To Make easy cucumber tea sandwiches
-
Step 1Slice cucumbers into 1/8 inch circles using a mandoline. You can cut them by hand, they are more uniform and quicker using a mandoline. Place cucumber slices in a bowl and set aside.
-
Step 2Spread a layer of cream cheese on each slice of bread.
-
Step 3Pat the cucumber slices dry with paper toweling. Depending on the size of your cuke, lay 1 or 2 sliced of cucumber on the bread. Add a bit of thinly sliced onion, if desired.
-
Step 4Sprinkle with dill or herb seasoning. You will need to make these shortly before serving.
