I have always loved deviled eggs. This was the recipe mom made, and I prefer it with the green onion tops rather than the watercress.

- 6 - eggs, hard boiled
- 1 cup minced watercress or green onion tops
- 1/2 cup mayo
- 1 teaspoon onion, grated
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon vinegar

Step 1Mix all but greens together then add egg yolks. There may be more than you need, so add until the right consistency. Stuff eggs and sprinkle with greens.
