I wanted something different this Easter so I'm making these eggs for our celebration.

Ingredients

6 large
hard boiled eggs
1 medium
avocado
1 tsp
minced onion
3 tsp
fresh lime juice
1 Tbsp
minced jalapeno
1 Tbsp
chopped fresh cilantro
1 Tbsp
diced tomato, i use roma tomatoes
pinch
chili powder
to taste
kosher salt
to taste
fresh ground black pepper

Step-by-Step

  • 1Peel, pit and mash the avocado.
  • 2Slice each egg in half horizontally. Set aside the yolks.
  • 3In a medium bowl, combine avocado, egg yolks, red onion, jalapeno, cilantro, lime juice and diced tomatoes.
  • 4Season with salt and pepper.
  • 5Spoon the mixture evenly into the egg halves.
  • 6Sprinkle with the chili powder.
