I wanted something different this Easter so I'm making these eggs for our celebration.

Ingredients

  • 6 large hard boiled eggs
  • 1 medium avocado
  • 1 teaspoon minced onion
  • 3 teaspoons fresh lime juice
  • 1 tablespoon minced jalapeno
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon diced tomato, i use roma tomatoes
  • pinch - chili powder
  • to taste - kosher salt
  • to taste - fresh ground black pepper

How To Make deviled eggs san antonio style

  • Step 1
    Peel, pit and mash the avocado.
  • Step 2
    Slice each egg in half horizontally. Set aside the yolks.
  • Step 3
    In a medium bowl, combine avocado, egg yolks, red onion, jalapeno, cilantro, lime juice and diced tomatoes.
  • Step 4
    Season with salt and pepper.
  • Step 5
    Spoon the mixture evenly into the egg halves.
  • Step 6
    Sprinkle with the chili powder.
