Ingredients
- 2 pounds Yukon Gold potatoes, peeled
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 4 large eggs beaten
- salt and pepper
- 12 sticks string cheese, cut in half crosswise
- 1 cup flour
- 1 cup Panko bread crumbs
- oil, for deep frying
- marinara sauce, for serving
How To Make croquette mozzarella sticks

Step 1Add the potatoes to cold water in a pan and cover them, and bring to a boil. Cook until the potatoes are soft, about 30 minutes. Drain the potatoes and mash them so there are no lumps.

Step 2Add the garlic, Parmesan cheese, 1 beaten egg, salt, and pepper. Take a spoonful of potatoes and make a patty and place a string cheese stick in the middle and wrap the potato around the cheese, and place on a sheet pan. Once all have been made, place them in the freezer for 30 minutes.

Step 3Place the flour, 3 beaten eggs, and Panko in 3 different shallow dishes. Heat oil to 350 degrees. Dredge the croquettes in the flour, then in the eggs, then roll in the panko. Deep fry in batches for about 3 to 5 minutes

Step 4Place on a paper plate lined with paper towels to drain. Serve with marinara.
