Ingredients

  • 2/3 cup chopped green onions
  • 1 clove garlic
  • 1 can black eyed peas
  • 1 can santa fe style beans (with sauce)
  • 16 ounces bag of white petite corn (thawed)
  • 1 can sliced olives
  • 2/3 cup chopped cilantro
  • - 3 or 4 avacados depending on size
  • - juice of 1 lime
  • - 2 or 3 fresh jalapeno peppers (optional)
  • DRESSING
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon cumin (more if you want it spicier)
  • - juice of 1/2 a lime
  • - salt & pepper to taste

How To Make cowboy caviar

  • Step 1
    Combine first 10 ingredients in a bowl. In a separate bowl mix dressing ingredients. Pour dressing over "caviar" and mix gently.
  • Step 2
    Serve with a chip hearty enough to handle this great dip :)
