Ingredients
- 2/3 cup chopped green onions
- 1 clove garlic
- 1 can black eyed peas
- 1 can santa fe style beans (with sauce)
- 16 ounces bag of white petite corn (thawed)
- 1 can sliced olives
- 2/3 cup chopped cilantro
- - 3 or 4 avacados depending on size
- - juice of 1 lime
- - 2 or 3 fresh jalapeno peppers (optional)
- DRESSING
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 teaspoon cumin (more if you want it spicier)
- - juice of 1/2 a lime
- - salt & pepper to taste
How To Make cowboy caviar

Step 1Combine first 10 ingredients in a bowl. In a separate bowl mix dressing ingredients. Pour dressing over "caviar" and mix gently.

Step 2Serve with a chip hearty enough to handle this great dip :)
