  • 2/3 c
    chopped green onions
  • 1 clove
  • 1 can(s)
    black eyed peas
  • 1 can(s)
    santa fe style beans (with sauce)
  • 16 oz
    bag of white petite corn (thawed)
  • 1 can(s)
    sliced olives
  • 2/3 c
    chopped cilantro
  • ·
    3 or 4 avacados depending on size
  • ·
    juice of 1 lime
  • ·
    2 or 3 fresh jalapeno peppers (optional)

  • 1/4 c
    red wine vinegar
  • 1/4 c
    olive oil
  • 1 tsp
    cumin (more if you want it spicier)
  • ·
    juice of 1/2 a lime
  • ·
    salt & pepper to taste

How to Make Cowboy Caviar


  1. Combine first 10 ingredients in a bowl. In a separate bowl mix dressing ingredients. Pour dressing over "caviar" and mix gently.
  2. Serve with a chip hearty enough to handle this great dip :)
