I really like egg salad and this is just one of many version! Cook time included time to boil and cool eggs.

Ingredients

  • 12 hard boiled eggs, peeled, chopped, not too small
  • 1 rib celery, minced
  • 1/2 cup mayonnaise, light if desired
  • 3 tablespoons red onion, minced
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh lemon juice
  • salt and pepper, to taste

How To Make classic egg salad

  • Step 1
    Mix the mayo with all ingredients except eggs in a large bowl.
  • Step 2
    Fold in eggs and add salt and pepper, to taste
  • Step 3
    If made ahead of time, you can refresh it with a little extra mayo and lemon juice.
