Ingredients
- 12 hard boiled eggs, peeled, chopped, not too small
- 1 rib celery, minced
- 1/2 cup mayonnaise, light if desired
- 3 tablespoons red onion, minced
- 2 tablespoons fresh parsley, minced
- 1 tablespoon dijon mustard
- 1 tablespoon fresh lemon juice
- salt and pepper, to taste
How To Make classic egg salad

Step 1Mix the mayo with all ingredients except eggs in a large bowl.

Step 3If made ahead of time, you can refresh it with a little extra mayo and lemon juice.
