Ingredients
- MAPLE FENNEL BACON
- 3 tablespoons maple syrup
- 1 tablespoon dark brown sugar
- 4 slices bacon
- 1 tablespoon fennel seed crushed
- TOAST
- 1 head garlic
- salt and pepper
- 20 cherry tomatoes halved
- olive oil
- 1 teaspoon sugar
- 3 sprigs thyme
- 1 sprig rosemary
- 1 baguette cut into 4 equal portions
- 1/2 pound burrata
- fresh basil
- squeeze of lemon
How To Make burrata toast with maple fennel bacon

Step 1Preheat the oven to 275 degrees. Line a baking sheet with parchment paper. Cut the garlic in half and lay it on the prepared sheet, and drizzle with olive oil and salt, and pepper. Place the tomatoes on the same sheet and drizzle with the olive oil and salt, and pepper. Throw the thyme and rosemary sprigs on top. Place in the oven for 1 hour.

Step 2Line another baking sheet with foil and lay the bacon out in a single layer. Mix the maple syrup and brown sugar together. Brush the bacon with the maple syrup mixture. Sprinkle the Fennel over the bacon and place it into the oven and bake until crispy, about 30 minutes. Let cool, then chop into pieces

Step 3Once the garlic and bacon are out of the oven, raise the temperature to 400 degrees. Place the baguette on a baking sheet and brush with olive oil. Place in the oven and brown.

Step 4Squeeze the garlic cloves out of the paper skins and spread the cloves on the toasted bread. Top with the burrata, then the tomatoes, bacon, basil, and a squeeze of lemon. Serve.
