  • 3 cloves garlic sliced
  • 1/4 cup all purpose flour
  • 2 cups canned milk,or regular milk to make a thick sauce
  • 2 pinches nutmeg
  • - salt and pepper to taste
  • BUFFALO CHICKEN MIXTURE
  • 2 medium chicken breast
  • 2 medium green onion, chopped
  • 1 cup frank's hot sauce
  • 1 1/2 cups mozzarella cheese, low-fat
  • 1/3 cup blue cheese dressing
  • - serve with celery sticks along side

How To Make buffalo chicken pizza

  • Step 1
Preheat oven at 500 degrees I use a pizza stone to cook the pizza on,so warm the stone with the oven, for 20 minutes.
  • Step 2
Melt the butter in a skillet, add the garlic and let cook very slowly, do not brown the garlic. You are infusing the butter with just the garlic flavor. Take out the garlic and add the flour, stir and cook on medium for a few minutes, to cook out the taste of the raw flour. Slowly add the milk whisking constantly till thickened. Add the nutmeg and salt and pepper. Let cool.
  • Step 3
Chop the chicken breast in small chunks, add to a skillet with 1 tablespoon olive oil. cook till no longer pink. Add the Frank's Hot sauce. Simmer a few minutes to really get the flavor in the meat. I add a bit of Tabasco to give it more of a kick, so taste and see what it needs.
  • Step 4
Roll out your favorite pizza crust. spread on the garlic sauce, add the cheese, chicken, green onions then I drizzle the blue cheese dressing over all. You could keep the blue cheese on the side for dipping if you would like.
  • Step 5
Bake till browned and bubbly, I love using the pizza stone because it creates a crisp crust, but if you want, bake on a pizza pan.
