I had something simular at a restaurant and it was good, but I felt that I could make it better....Hope you enjoy!

Ingredients For blt tomato cups

  • 12 sm
    roma tomatoes
  • 3 c
    romaine lettuce leaves, chopped
  • 6 slice
    bacon, cut into 1-1/2 inch slices
  • 2 Tbsp
    mayonnaise or ranch dressing
  • 2 Tbsp
    crushed any flavor croutons

How To Make blt tomato cups

    In nonstick skillet over medium heat, cook bacon until crisp, drain on paper towel. With serrated Knife cut a small slice from the bottom and tops of tomatoes so they will stand up. and then cut each tomato in half crosswise. Using a teaspoon, scoop out seeds and pulp from each tomato halve leaving enough tomato to have a firm shell.

    In medium bowl, combine lettuce, mayonnaise or ranch dressing. using fingers or large spoon, fill tomato halves with lettuce mixture, sprinkle with bacon and croutons. Serve immediately.
