These are great for a casual gathering of friends and family, to take to a potluck supper at church. Took a bunch to church, gone in just minutes. Hope you enjoy them as much as they did.

Blue Ribbon Recipe

These BLT skewers and a tasty appetizer twist on the classic sandwich. Each skewer is layered with salty pancetta, a sweet cherry tomato, fresh basil, and tangy sourdough bread. Pancetta is a great twist on traditional bacon (which would be a good substitute and just as delicious). They're wonderful dipped in cool ranch dressing. Serve at a backyard barbecue or a summertime picnic in the park. Who doesn't love to eat food from a stick?

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound sliced pancetta, cut into 1-inch triangles (1/2-inch-thick)
  • 1 pint cherry tomatoes, halved
  • 1 - fresh basil
  • 3 cups cubed sourdough bread, cut into 1 inch cubes

How To Make blt skewers

  • Cherry tomato halves on a lid.
    Step 1
    Here's a great tip for halving the tomatoes. Take two round lids. Put some tomatoes on one and cover with the other.
  • Add a lid on top and slice through tomatoes with a sharp knife.

    With a sharp knife, cut between the lids.
  • Repeat until all are halved.

  • Heat pancetta in a skillet.

    In a large skillet, heat olive oil over medium heat. Add pancetta. Cook, stirring frequently, for 8 to 10 minutes or until lightly browned.
  • Drain on a paper towel.

    Remove pancetta and drain on paper towels until cool.
  • Add pancetta to a skewer.

    On 4-inch skewers, thread 2 pieces pancetta.
  • Add a cherry tomato half.

    Add 1 cherry tomato half.
  • Add a piece of basil.
    Step 8
    Add 1 basil leaf.
  • Add a bread cube.
    Step 9
    Add 1 bread cube.
  • BLT Skewers on a serving plate with ranch dressing.
    Step 10
    Add to a tray. Serve alone or with ranch dressing.
