Ingredients

  • 1/2 pound black-eyed peas, soaked
  • 4 - garlic cloves, crushed
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 tablespoons water

How To Make black-eyed pea fritters

  • Step 1
    When peas have softened, rub off skins then soak an additional 30 minutes.
  • Step 2
    Drain and rinse. In a food processor, process peas, garlic, salt and pepper.
  • Step 3
    Add water while continuing to process.
  • Step 4
    Add enough water to get a smooth, thick puree.
  • Step 5
    Preheat oven to 250.
  • Step 6
    In a large skillet, heat 2 to 3 inches oil and fry 1 tablespoon of the batter until its golden brown.
  • Step 7
    Repeat until all the batter has been fried in this way.
  • Step 8
    Keep in oven to keep hot.
  • Step 9
    Serve piping hot, sprinkled with salt and lime juice.
