bbq chicken tostada
This is a very new recipe for me, combining my love of bbq with a distinctly California style and flavor. So easy to make and quite delicious.

Ingredients
- 4 small corn tortillas
- 1 can refried beans
- 2 cups shredded bbq chicken
- 2 cups coleslaw
- 4 slices radishes, sliced
- 1/2 cup fresh coriander chpped
- 1 small red chilies, dried
- 1 small lime (juiced)
How To Make bbq chicken tostada

Step 1Lay the tortillas on a clean work surface and coat both sides with cooking spray. Then carefully place each tortilla on a foil lined cookie sheet. Bake at 375°F until crispy, 7 to 10 minutes.

Step 2(Option two) Heat the oil in a large frying pan over medium-high heat. Cook the tortillas for 30 seconds each side or until golden and crisp. Drain on paper towel.

Step 3Heat up refried beans in a small saucepan. Spread onto tortillas.

Step 4Combine the chicken, coleslaw, radish, coriander and pepper in a large bowl, and season with salt and pepper to taste. Squeeze lime juice over chicken mixture and toss to combine. Pile it up high on the tortilla and enjoy.
