- 2 cups flour, all-purpose variety
- 1 teaspoon salt, Kosher variety, fine grind
- 1 large egg, room temperature
- 1/2 cup cold water

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Mixing the Dough Add the flour to a bowl and mix in the egg. Then slowly add the water, a bit at a time, until you have a shaggy dough.

Step 4I am using a stand mixer, fitted with a dough hook; however, you could use a bowl and mix by hand.

Step 5Remove from the bowl, and knead on a clean floured surface until you have a firm ball that is not too sticky, about 5 – 6 minutes.

Step 6If the dough is too sticky, sprinkle on a bit of flour and work it in until it does not stick to your hands. If the dough is too dry, sprinkle on a bit of water and work it into the flour.

Step 7Cover with plastic, and let rest for 30 minutes.

Step 8Cut into three or four sections, and roll into ropes about six inches wide. Cut off pieces and roll into balls about half the size of a golf ball.

Step 9Using a rolling pin or a pasta machine, roll the dough out until about 1/8 inch thick.

Step 10If you want them perfectly round, you could use a large cookie cutter. In addition to circles, I cut the dough into squares, so I could make wonton triangles.

Step 11Fill them with whatever you fancy, and then deep fry or bake until golden brown and yummy.

Step 13Serve with a side of rice and/or a good Asian dipping sauce. Enjoy.
