  • 1/2 cup sugar
  • 1/2 cup fish sauce
  • 6 cloves garlic, minced
  • 20 chicken wing sections
  • oil, for frying
  • 1/2 cup rice flour
  • 1/4 cup cornstarch
  • 2 teaspoons baking powder
  • lime wedges, for serving

How To Make vietnamese fish sauce wings

  • Step 1
    Mix the water, sugar, fish sauce, and garlic together, whisking until the sugar is dissolved. Add the wings and marinate in the fridge for about 8 hours.
  • Step 2
    Remove wings to a colander and let sit for 30 minutes. Heat oil to 350 degrees F. Mix the rice flour, cornstarch, and baking powder together.
  • Step 3
    Dredge the wings in the flour mixture and deep fry in batches 8 minutes. Serve with lime wedges.
