- 1/2 cup sugar
- 1/2 cup fish sauce
- 6 cloves garlic, minced
- 20 chicken wing sections
- oil, for frying
- 1/2 cup rice flour
- 1/4 cup cornstarch
- 2 teaspoons baking powder
- lime wedges, for serving

Step 1Mix the water, sugar, fish sauce, and garlic together, whisking until the sugar is dissolved. Add the wings and marinate in the fridge for about 8 hours.

Step 2Remove wings to a colander and let sit for 30 minutes. Heat oil to 350 degrees F. Mix the rice flour, cornstarch, and baking powder together.

Step 3Dredge the wings in the flour mixture and deep fry in batches 8 minutes. Serve with lime wedges.
