Ingredients
- 1 pound boneless skinless chicken thighs cut into small chunks
- 3 tablespoons fish sauce
- 2 small shallots rough chop
- 4 cloves garlic
- 1 stalk lemongrass white inner bulb only rough chop
- 1/3 cup cilantro plus more for garnish
- 1 1/2 teaspoons cornstarch
- 1/2 teaspoon salt and pepper
- 1/2 cup sugar
- 1 bottle sweet chili sauce
How To Make vietnamese chicken meatballs

Step 1Add all ingredients except sugar and sweet chili sauce to large food processor. Process until mixed well.

Step 2Preheat oven 400 degrees. Line a rimmed baking sheet with parchment paper. Pour sugar onto a plate. Moisten hands and roll chicken mixture into 1 to 1/2 inch balls. Roll in sugar and place on baking sheet.

Step 3Bake for 15 minutes until they are browned and cooked through. Serve drizzled with sweet chili sauce and cilantro
