  • 1 lb
    boneless skinless chicken thighs cut into small chunks
  • 3 Tbsp
    fish sauce
  • 2 small
    shallots rough chop
  • 4 clove
  • 1 stalk(s)
    lemongrass white inner bulb only rough chop
  • 1/3 c
    cilantro plus more for garnish
  • 1 1/2 tsp
  • 1/2 tsp
    salt and pepper
  • 1/2 c
  • 1 bottle
    sweet chili sauce

How to Make Vietnamese Chicken Meatballs


  1. Add all ingredients except sugar and sweet chili sauce to large food processor. Process until mixed well.
  2. Preheat oven 400 degrees. Line a rimmed baking sheet with parchment paper. Pour sugar onto a plate. Moisten hands and roll chicken mixture into 1 to 1/2 inch balls. Roll in sugar and place on baking sheet.
  3. Bake for 15 minutes until they are browned and cooked through. Serve drizzled with sweet chili sauce and cilantro
