Vietnamese Chicken Meatballs
1 lbboneless skinless chicken thighs cut into small chunks
3 Tbspfish sauce
2 smallshallots rough chop
1 stalk(s)lemongrass white inner bulb only rough chop
1/3 ccilantro plus more for garnish
1 1/2 tspcornstarch
1/2 tspsalt and pepper
1 bottlesweet chili sauce
How to Make Vietnamese Chicken Meatballs
- Add all ingredients except sugar and sweet chili sauce to large food processor. Process until mixed well.
- Preheat oven 400 degrees. Line a rimmed baking sheet with parchment paper. Pour sugar onto a plate. Moisten hands and roll chicken mixture into 1 to 1/2 inch balls. Roll in sugar and place on baking sheet.
- Bake for 15 minutes until they are browned and cooked through. Serve drizzled with sweet chili sauce and cilantro
