Everyone has their own take on Tortilla Roll-ups and each one looks good. This is mine, have made it for many years. Hope you try and enjoy.

Ingredients
- 1 pound good sausage
- 2 packages 8 oz cream cheese, softened
- 1 can chopped green chilies (flat can)
- 1 - small onion, minced (about 1 1/2 tbsp)
- 1 jar chopped pimentos (small jar)
- 1 cup grated cheddar cheese
- 1-2 - dozen flour tortillas
- - salt and pepper to taste
How To Make tortilla roll-ups (w/sausage)

Step 1Cook sausage, mashing into very small pieces. Drain. Combine with cream cheese until well mixed. Add all other ingredients and mix well. Warm tortillas a couple at a time in the microwave (don't leave long, they will be hard). Spread a heaping tablespoon of mixture on the warm tortilla and spread all over, roll up like jelly roll and place in pan, seam side down. Continue until all are rolled. I like to cover mine and refrigerate over night, they cut better. But if you don't have time that is ok. Slice into 3/4 inch slices and place on plate. Continue until all are sliced.
