spring rolls (my mother's recipe)
My mom made this while I was growing up. She'd make a big batch of it for parties, etc.
Blue Ribbon Recipe
We like to try different spring roll recipes. Each one is a little unique. Darla's mom's version of spring rolls is delicious. Frying the tasty filling in really thin lumpia wrappers gives these rolls a nice crunch with every bite. Dip in your favorite sauce (we opted for sweet chili) and you have a perfect appetizer or snack.

Ingredients
- 2 pounds ground pork or ground chicken
- 1/2 cup chopped onions
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 4 - egg yolks, save white for egg wash
- 1-1/2 cup grated or shredded carrots
- 3 cups bean sprouts, must be dry
- 2-1/2 ounce bean threads, also call rice noodles
- 1 teaspoon ground ginger
- 1/2 cup soy sauce, low sodium
- 1 package Filipino lumpia wrappers
How To Make spring rolls (my mother's recipe)

Step 1Soak the bean threads in water for 1 hour. Drain well. Cut threads into 4 inches pieces. Set aside.

Step 2Preheat hot oil in a deep fryer. Mix pork, onion, salt, pepper, ginger, soy sauce, garlic, and yolks together in a bowl.

Step 3Add carrots, bean sprouts, and bean threads. Mix using fork and spoon.

Step 4Place a couple of teaspoons of mixture on a wrap.

Step 5Wet the edges of wraps using egg whites mix with water, roll them up, and seal. Using the egg whites and water mixture on the edges helps to create a seal.

Step 6Deep fry in hot oil until golden brown. Drain on paper towels.

Step 7Serve with sauce of your choice. Enjoy!
