spring rolls (my mother's recipe)

My mom made this while I was growing up. She'd make a big batch of it for parties, etc.

Blue Ribbon Recipe

We like to try different spring roll recipes. Each one is a little unique. Darla's mom's version of spring rolls is delicious. Frying the tasty filling in really thin lumpia wrappers gives these rolls a nice crunch with every bite. Dip in your favorite sauce (we opted for sweet chili) and you have a perfect appetizer or snack.

Ingredients

  • 2 pounds ground pork or ground chicken
  • 1/2 cup chopped onions
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 - egg yolks, save white for egg wash
  • 1-1/2 cup grated or shredded carrots
  • 3 cups bean sprouts, must be dry
  • 2-1/2 ounce bean threads, also call rice noodles
  • 1 teaspoon ground ginger
  • 1/2 cup soy sauce, low sodium
  • 1 package Filipino lumpia wrappers

How To Make spring rolls (my mother's recipe)

  • Bean threads in water.
    Step 1
    Soak the bean threads in water for 1 hour. Drain well. Cut threads into 4 inches pieces. Set aside.
  • Pork, onion, salt, pepper, ginger, soy sauce, garlic, and yolks in a bowl.
    Step 2
    Preheat hot oil in a deep fryer. Mix pork, onion, salt, pepper, ginger, soy sauce, garlic, and yolks together in a bowl.
  • Carrots, bean sprouts, and bean threads added to bowl.
    Step 3
    Add carrots, bean sprouts, and bean threads. Mix using fork and spoon.
  • Filling on top of a lumpia wrapper.
    Step 4
    Place a couple of teaspoons of mixture on a wrap.
  • Lumpia wrapper rolled.
    Step 5
    Wet the edges of wraps using egg whites mix with water, roll them up, and seal. Using the egg whites and water mixture on the edges helps to create a seal.
  • Frying the spring rolls in oil.
    Step 6
    Deep fry in hot oil until golden brown. Drain on paper towels.
  • Spring Rolls dipped in chili sauce.
    Step 7
    Serve with sauce of your choice. Enjoy!
