Ingredients
- 9 chicken thighs and drumsticks
- 2 tablespoons olive oil
- 2 cups fresh spinach
- 1 can artichoke hearts, drained (15 oz)
- 1 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- salt and pepper
- 1 cup mozzarella cheese, shredded
How To Make spinach & artichoke dip chicken

Step 1Add the olive oil to a large skillet. Season the chicken with salt and pepper and then add to the pan. Brown on both sides. Then cover and cook for about 20 minutes turning chicken until it's almost done. Remove chicken to a plate.

Step 2Add the spinach, artichokes, mayonnaise, Parmesan, and mozzarella to the pan. Cook until warmed, the spinach is wilted, and the cheese is melted. Remove the dip from the pan to a bowl. Add the chicken back to the pan and then top with the dip.

Step 3Cover and cook for about 2 more minutes. Serve.
