This excellent recipe comes from SQUARE TABLE - A Collection of Recipes from Oxford, Mississippi -p. 161. It takes some prep time, but it will be worth it for your next brunch. The delicious flavors come through whether the bacon is hot or cold, so it makes a great morning snack when tailgating in The Grove at Ole Miss!
Preheat oven to 350 degrees F. In a large bowl beat eggs and add dry mustard, cayenne and vinegar.
In a flat pan, place cracker crumbs.
One at a time dip bacon strips in egg mixture, then dredge both sides in cracker crumbs.
Place bacon strips onto ungreased foil-lined cookie sheets and bake 30 - 40 minutes. Bacon will remain flat when cooked.
Drain bacon on paper towels and cut strips into thirds for bite-sized pieces.
