sausage cup appetizers

This morning, at 4:00am, I went to a Royal Wedding Pajama Tea Party and these sausage cups were served. They were so good and the hostess assured me that they were very easy to make. This recipe could be modified to use hamburger meat and taco seasoning instead of sausage, making mini taco cups, or I even read a recipe by Paula Deen using shrimp salad in the cups.....I think the possibilities are limited only by your imagination! I plan to make these for my in-laws' 60th wedding celebration.

Ingredients
- 50 - 60 - frozen mini phylo dough cups
- 1 lb - mild bulk sausage (kroger brand is good and has little grease)
- 1 - red bell paper
- 1 cup shredded cheese
- - black olive slices
How To Make sausage cup appetizers

Step 1Preheat oven to 350 degrees. Spray a cookie sheet with non-stick spray.

Step 2Brown sausage in fry pan, along with 3/4 of bell pepper (diced), until no longer pink.

Step 3Place phylo cups on prepared cookie sheet and fill the cups with the crumbled sausage/bell pepper mixture. Place a black olive slice on top (optional) and sprinkle with cheese.

Step 4Bake in oven for 15 minutes. **The sausage/bell pepper mixture can be made ahead of time, stored in a tight container and placed in the fridge for a couple of days or even frozen until the day you want to make the cups.
