sausage cornbread appetizers

These bite sized appetizers are simple and fun to make. My son and his college buddies beg me to make them for the Super Bowl. You can tweak them to your taste. I usually make a "hot- spicy" batch, and a plain one. The addition of Jalapeno Kielbasa and/ or cheese gives them a nice kick. The others are more sweet. Both are delicious. You can make these ahead of time and freeze in zip lock bags.

  • 1 box
    jiffy cornbread
  • 1
    egg
  • 1/3 c
    millk
  • 1
    kielbasa ( jalapeno or plain)
  • 1 c
    finely shredded sharp cheddar cheese or jalapeno jack cheese

How To Make sausage cornbread appetizers

    Prepare Jiffy cornbread according to package.Add approx 3/4 cup finely shredded cheddar cheese to batter.

    Cut keilbasa in to 1/4 inch cubes and slice into small bits ( you will probably not use all of it)

    Spray mini muffin pan with pam. (You will need two pans of 12 i one large or approx 24 depending on the size of the cups-(these are available disposable in the grocery store at 12 each sometimes) Scoop about 1 Tbs of cornbread mixture in each muffin cup. Place 2 -3 cubes of sausage and add pinch of cheese on top of each muffin. Bake at 400 degrees approx 8-10 mins or until done. Serve warm!
