Ingredients

  • 1 c
    sauerkraut, drained and cut up
  • 1 c
    sliced corned beef, cut up
  • 1 c
    dry bread crumbs
  • 1
    egg, slightly beaten
  • 1 small
    onion, finely chopped
  • 1/4 c
    water
  • 2 Tbsp
    snipped parsley
  • 1 tsp
    prepared horseradish
  • 1 clove
    garlic, crushed
  • 1/2 tsp
    salt
  • 2
    eggs, beaten
  • 1/2 c
    dry bread crumbs
  • ·
    prepared mustard

How to Make SAUERKRAUT SURPRISES

Step-by-Step

  1. Mix sauerkraut, corned beef, 1 cup bread crumbs, 1 egg, the onion, water, parsley, horseradish, garlic, and salt; refrigerate at least 1 hour.
  2. Heat oven to 400º.
  3. Shape sauerkraut mixture into 1-inch balls. Dip balls in 2 beaten eggs, then roll in ½ cup bread crumbs.
  4. Bake on ungreased baking sheet until light brown, about 20 minutes.
  5. Serve hot with mustard.
