Fun take on Corned Beef and Cabbage for St. Patrick's Day!

Ingredients

  • 1 cup sauerkraut, drained and cut up
  • 1 cup sliced corned beef, cut up
  • 1 cup dry bread crumbs
  • 1 - egg, slightly beaten
  • 1 small onion, finely chopped
  • 1/4 cup water
  • 2 tablespoons snipped parsley
  • 1 teaspoon prepared horseradish
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 2 - eggs, beaten
  • 1/2 cup dry bread crumbs
  • - prepared mustard

How To Make sauerkraut surprises

  • Step 1
    Mix sauerkraut, corned beef, 1 cup bread crumbs, 1 egg, the onion, water, parsley, horseradish, garlic, and salt; refrigerate at least 1 hour.
  • Step 2
    Heat oven to 400º.
  • Step 3
    Shape sauerkraut mixture into 1-inch balls. Dip balls in 2 beaten eggs, then roll in ½ cup bread crumbs.
  • Step 4
    Bake on ungreased baking sheet until light brown, about 20 minutes.
  • Step 5
    Serve hot with mustard.
