Here is another recipe #3 for using up that venison.

Ingredients

  • 1 1/2 pounds venison or ground beef
  • 1 1/2 tablespoons mortons tenderquick salt
  • 3/4 tablespoon liquid smoke flavoring
  • 1/8 teaspoon garlic powder
  • 1/2 cup brown sugar
  • dash red pepper flakes, as much or little as you like

How To Make salami

  • Step 1
    Mix all ingredients together and form a log. Refrigerate uncovered for 24 hours.
  • Step 2
    Place on rack over a sheet cake pan to catch drips. Bake at 300º for 1 hour.
