Here is another recipe #3 for using up that venison.

1 1/2 lb
venison or ground beef
1 1/2 Tbsp
mortons tenderquick salt
3/4 Tbsp
liquid smoke flavoring
1/8 tsp
garlic powder
1/2 c
brown sugar
red pepper flakes, as much or little as you like

How to Make Salami


  • 1Mix all ingredients together and form a log. Refrigerate uncovered for 24 hours.
  • 2Place on rack over a sheet cake pan to catch drips. Bake at 300ยบ for 1 hour.
