guiltless pizza...shhh it's cauliflower

Great way to cut down on white flower and sneak in a vegetable. You will be surprised how well cauliflower does as a crust. Can be made gluten free!

Ingredients

  • 1 cup riced, then cooked cauliflower
  • 1/2 cup shredded mozzarella
  • 1/2 cup parmesan grated
  • 1 - egg beaten
  • 1 teaspoon italian seasoning
  • 1 clove garlic crushed
  • 1/2 teaspoon salt

How To Make guiltless pizza...shhh it's cauliflower

  • Step 1
    Cut cauliflower florets into chunks then pulse in processor or dice finely. Cheese grater works great.
  • Step 2
    Microwave riced cauliflower for 5 minutes. Transfer to fine drainer and allow liquid to drain out completely. Once drained transfer to kitchen towel to wrap and squeeze excess. Drying is important!!!
  • Step 3
    Preheat to 450 Spray cookie sheet. In bowl mix cauliflower, egg and Parmesan. Add Italian seasoning, garlic and salt. Place "dough" on cookie sheet, form into crust and bake 15 minutes.
  • Step 4
    Add toppings to cooked "dough" and return to oven until heated and melted.
