pipikaula - hawaiian style beef jerky
It's a great appetizer or a pick-me-up snack. It's one of those things that you can't eat just one. One of many favorites here in Hawaii. I make a lot of this for game day.

Ingredients
- 3 pounds flank steak
- 1 cup soy sauce
- 1/4 cup water
- 1 tablespoon oyster sauce
- 3 tablespoons brown sugar
- 1 tablespoon grated ginger
- 2 cloves minced garlic
- 2 tablespoons hawaiian salt or rock salt
- 1/2 teaspoon red chili pepper flakes (opt.)

Step 1Cut the flank steak into 1 1/2 inch strips.

Step 2Combine all ingredients and mix well, be sure that all the salt and sugar crystals are dissolved.

Step 3Soak all the meat strips in the marinade overnight in the refrigerator.

Step 4Use a rack with a drip pan below, you might want to cover the pan with foil for easier clean-up.

Step 5Place all the strips of meat on the wire rack without it touching each other.

Step 6Bake in the oven at 175 degrees for 7 to 8 hours. It should be pliable and not burnt.

Step 7Slice it up diagonally. Keep it in an air tight container or in a zip-lock bag.

Step 8Keep refrigerated.
