Ingredients
- 1 tablespoon vegetable oil
- 1/4 cup shallots minced
- 2 cloves garlic minced
- 1/2 teaspoon white pepper
- 1 1/2 tablespoons fish sauce
- 1/3 cup brown sugar
- 2 ounces ground chicken
- 2 ounces uncooked shrimp finely chopped
- 3 tablespoons peanuts chopped
- 20 pineapple triangles or rectangles about 1 inch by 1 inch and 1/2 inch thick
- cilantro leaves for garnish
How To Make pineapple with peanut chicken topping

Step 1Place the vegetable oil in a large wok or skillet. Add the shallots, garlic and white pepper and saute 3 minutes. Add the fish sauce brown sugar, chicken and shrimp and cook until meat is no longer pink. Add the peanuts and cook until no moisture remains.

Step 2Remove from heat and spread out on a flat plate and let cool completely.

Step 3Place the pineapple slice on a serving plate. Top each with the meat mixture. Then top each with a cilantro leaf and serve
