Ingredients For peppy pizza pies

  • FOR THE BISCUITS
  • 1 c
    flour
  • 2 tsp
    baking powder
  • 1/8 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 1/2 Tbsp
    cold butter, cut into pieces
  • 1 Tbsp
    shortening
  • 1/2 c
    buttermilk
  • FOR THE PIZZAS
  • 1/2 c
    pizza sauce, store bought, or mine posted here
  • 1/2 c
    each onions, green peppers, mushrooms
  • 12
    slices pepperoni
  • 4 oz
    mozzerella cheese, shredded

How To Make peppy pizza pies

    For the biscuits: whisk together the dry ingredients. Add the butter and shortening, and with your fingers, munch it in the flour until its nicely disbursed. Add the buttermilk and mix with spoon until just combined. Turn out on a floured surface. Turn a few times, kneading lightly.

    Roll out to a 1/4 inch round. Using a cookie cutter, cut out twelve circles. Oil a 12 cup cupcake pan and place a circle in each, pressing down lightly.

    Saute the onions, green peppers and mushrooms in a bit of oil until mostly done.

    Place a tsp of sauce in the center of each dough circle. Place one pepperoni slice on top of each. Top with a tsp of the toppings.Finish with a tablespoon of shredded mozzarella.

    Place in a preheated 375 oven for about 15 minutes or until the cheese has melted and the rims of the biscuits are lightly browned.

    Obviously the toppings are up to you. You could also do a mexican flavored filling. Or use sausage instead of pepperoni. Easy to double or triple of course if you are having a crowd.
