These are the best lettuce wraps I have ever had! I just love P.F Chang's anyway and anytime i'm in Nashville I have to have lunch or dinner there.

Ingredients
- MARINADE
- 1 teaspoon cornstarch
- 2 teaspoons dry sherry or red wine
- 2 teaspoons water
- 2 teaspoons soy sauce
- COOKING SAUCE
- 1 tablespoon hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon dry sherry or red wine
- 2 tablespoons oyster sauce
- 2 tablespoons water
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 2 teaspoons cornstarch
- FILLING
- 1 1/2 pounds ground chicken (or pork, turkey)
- 5 tablespoons oil
- 1 teaspoon fresh minced ginger
- 2 cloves garlic, minced
- 2 - green onions minced
- 2 small dried chillis, minced (optional)
- 8 ounces can bamboo shoots, minced
- 8 ounces can waterchestuts, minced
- 8 - dried shiitake mushrooms, minced (you could use dried oyster mushrooms)
- 12 - bib lettuce cups (you could use iceburg)
- 1 package cellophane noodles, prepared according to package
How To Make p.f. chang's lettuce wraps

Step 1Mix marinade and add chicken. Cover and chill for an hour. Cover mushrooms with boiling water, let stand 30 minutes then drain. Cut and discard woody stems. Mince mushrooms, set aside.

Step 2Mix all ingredients for cooking sauce in a bowl and set aside.

Step 3Heat wok or large skillet over medium-high heat. Add 3 Tbsp oil. Add ground chicken or pork until browned. place meat in a bowl and Set aside.

Step 4Add 2 Tbsp oil to the pan; add ginger, garlic, and onion. Cook for 2-3 minutes. Add mushrooms, bamboo shoots and water chestnuts. Stir an additional 2-3 minutes.

Step 5Return meat to the pan; add mixed cooking sauce to the pan. Cook until thickened and hot.

Step 6Break cooked cellophane noodle into small pieces and cover bottom of serving dish; Pour filling on top of noodles; reserve some for a garnish on top.

Step 7Serve along side of lettuce for everyone to serve themselves. Spoon mixture into lettuce and roll like a burrito.
