I advise you to make the filling the day before you want to serve these, then bake them fresh the day of your event. These hand pies are very good and have a unique taste thanks to the wonderful herbs and spices that combine with the trinity of vegetables. I know the ingredients seem a little unusual, but they work together beautifully! The raisins and vinegar really finish the inside well, and don't forget the dipping sauce!

1/8 tspcayenne pepper, optional

1/3 craisins, chopped

1 1/2 Tbspred wine vinegar

1 lgegg, beaten for sealing pies

1 pkgfrozen roll dough, thawed

1/3 capple jelly, melted

How To Make nacogdoches meaty hand pies

1Saute onion, bell pepper, and celery in olive oil until the begin to soften. Add the pork, beef, Creole seasoning and cayenne, if using. Break up meats and cook until well browned. Pour off any extra fat.

2Lower the heat to medium and sprinkle with the flour, cilantro, garlic, allspice, raisins and vinegar. Stir in seasonings and continue to cook 4 minutes, stirring to prevent scorching. Remove from heat and let cool for at least 15 minutes. Put into a refrigerator safe bowl and let chill for several hours or overnight to meld the flavors.

3Preheat oven to 375°. Roll our each thawed roll into a 3"-4" circle. Spoon a heaping tablespoon or so of the cold meat mixture onto one half of the dough circle, keeping it away from the edges. Moisten the edge of the circle with the beaten egg, fold over the circle to a half moon and crimp edge with a fork. Place on a greased baking sheet and repeat for all the pies. Bake at 375° until a golden to medium brown, usually about 20 - 25 minutes depending on your oven.

4Stir together apple jelly, creole mustard and honey in a small bowl and serve on the side.
