Ingredients
- 2 pounds ground beef
- 2 eggs
- 1/2 cup ketchup
- 1/4 cup minced onion
- 1/4 cup minced green pepper
- 1/4 cup minced red bell pepper
- 1/4 cup minced jalapeno pepper
- 20 crushed saltine crackers
- 4 cloves garlic, minced
- 1/2 cup mashed potato flakes
- 1 can salt and pepper
- 1 can condensed nacho cheese soup
- 1 can condensed cream of mushroom soup
- 1 cup water
- 1 cup Mexican blend shredded cheese
- 1 clove french fried onions
How To Make nacho meatballs

Step 1Preheat oven 350 degrees F. Mix the ground beef, eggs, ketchup, onion, green and red bell pepper, jalapeno, saltines, garlic, mashed potato flakes and salt and pepper together. Mix well and roll into balls. Place in a large baking pan. Bake for 1 hour, turning once.

Step 2Mix the soups together with the water on stove top. Stir in the cheese until the cheese is melted. Pour over the meatballs. Bake 20 more minutes.

Step 3Remove to a dish and garnish with the french fried onions.
