Ingredients
- 8 ounces lean ground beef
- 2 cloves garlic, minced
- 1 - tomato seeded and diced
- 1 package mini sweet peppers
- 1/4 cup corn
- 1 small sweet onion, diced
- 1 tablespoon taco seasoning
- 1/4 cup cooked rice
- 3 ounces shredded cheddar cheese
How To Make mini taco stuffed peppers

Step 1Brown the ground meat. Then Add the onions, corn and garlic and cook 4-5 minutes.

Step 2Add the taco seasoning and 1 tablespoon water. Add salt and pepper. Mix well and cook another minute.

Step 3Mix in the tomatoes. Remove from heat and let cool for 5 minutes. Then mix in the rice and cheese.

Step 4Evenly divide the mixture between the peppers and stuff until completely full.

Step 5Place filled peppers in a glass dish. Cover with plastic wrap. Microwave 3-6 minutes until peppers are soft. Serve immediately. Serve with sour cream.
