mini taco stuffed peppers

I used a recipe from Chef Ami which I changed to my preferences.

Ingredients

  • 8 ounces lean ground beef
  • 2 cloves garlic, minced
  • 1 - tomato seeded and diced
  • 1 package mini sweet peppers
  • 1/4 cup corn
  • 1 small sweet onion, diced
  • 1 tablespoon taco seasoning
  • 1/4 cup cooked rice
  • 3 ounces shredded cheddar cheese

How To Make mini taco stuffed peppers

  • Step 1
    Brown the ground meat. Then Add the onions, corn and garlic and cook 4-5 minutes.
  • Step 2
    Add the taco seasoning and 1 tablespoon water. Add salt and pepper. Mix well and cook another minute.
  • Step 3
    Mix in the tomatoes. Remove from heat and let cool for 5 minutes. Then mix in the rice and cheese.
  • Step 4
    Evenly divide the mixture between the peppers and stuff until completely full.
  • Step 5
    Place filled peppers in a glass dish. Cover with plastic wrap. Microwave 3-6 minutes until peppers are soft. Serve immediately. Serve with sour cream.
