  • 8 oz
    lean ground beef
  • 2 clove
    garlic, minced
  • 1
    tomato seeded and diced
  • 1 pkg
    mini sweet peppers
  • 1/4 c
  • 1 small
    sweet onion, diced
  • 1 Tbsp
    taco seasoning
  • 1/4 c
    cooked rice
  • 3 oz
    shredded cheddar cheese

How to Make Mini Taco Stuffed Peppers


  1. Brown the ground meat. Then Add the onions, corn and garlic and cook 4-5 minutes.
  2. Add the taco seasoning and 1 tablespoon water. Add salt and pepper. Mix well and cook another minute.
  3. Mix in the tomatoes. Remove from heat and let cool for 5 minutes. Then mix in the rice and cheese.
  4. Evenly divide the mixture between the peppers and stuff until completely full.
  5. Place filled peppers in a glass dish. Cover with plastic wrap. Microwave 3-6 minutes until peppers are soft. Serve immediately. Serve with sour cream.
