Ingredients

  • - oil for frying
  • 8 - small size flour tortillas
  • - nacho cheddar cheese flavored popcorn salt
  • 1 tablespoon butter
  • 1/4 cup onions
  • 1 package mini cocktail cheddar little sausages
  • 1-28 oz can boston style baked beans
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon yellow mustard
  • 1 1/2 cups shredded marble jack cheese

How To Make mini sausage and beans nachos

  • Step 1
    Place oil in a large skillet or Dutch oven and heat to 375. (About ½ full) Cut tortillas into fourths. When oil is hot enough place a few tortilla wedges in at a time. Fry just a minute and turn to the other side. These cook really fast don’t cook too long cause they will get hard. When done place them on paper towel and sprinkle with the nacho cheddar salt right away while they are warm. Repeat with all the remaining tortillas. In another skillet place 1 Tablespoon of butter and the onions. Sauté onions until tender then add the little cheddar sausages and cook just to brown them. In a large sauce pan place the beans, crumbled bacon, brown sugar, ketchup and mustard and heat until warm. Add the onions and cheddar sausages and stir well. On a large platter place nachos then pour beans over the nachos and top with the shredded cheese.
