Ingredients
- 1 pound mild Italian sausages, casings removed
- 1/2 cup white onions, finely chopped
- 1/3 cup roasted red peppers, well-drained and finely diced
- 1/2 tablespoon Italian seasoning
- 1/4 teaspoon red pepper flakes, or to taste
- 1 package cream cheese, room temperature (8 oz)
- 2 cups shredded sharp cheddar cheese
- 1/4 cup parsley, finely chopped
- 1 1/2 cups self-rising flour
How To Make mini cheesy sausage balls

Step 1In a large bowl, combine all the ingredients, mixing them by hand.

Step 2Place a plastic wrap on top, making sure it touches the surface, and transfer to the fridge for at least 1 hour.

Step 3Preheat oven to 425 degrees F and line a baking sheet with a lightly greased foil.

Step 4When ready, wet your hands and, using a small scoop, form the mixture into balls. Place them on the prepared baking sheet.

Step 5Transfer to the preheated oven and bake for 18 minutes or until the internal temperature reaches 160 degrees F.

Step 6Turn the heat on broil and cook for 2 minutes or until nicely browned.

Step 7Remove from the heat, and place meatballs on a plate or baking sheet lined with a paper towel to remove excess fat.

Step 8Transfer them to a serving plate along with your favorite dipping sauce. Makes 40 meatballs.
