microwave nachos
I made this for Super Bowl Sunday. It was super quick and no one could tell the difference between those that took longer in the oven. My new favorite way to make nachos. :)

Ingredients
- 1 bag tortilla chips
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 1 15-ozas cans refried beans
- 1 jar sliced jalapenos, drained (as many as desired)
- 1 pound lean ground beef
- 1/4 cup diced onion
- 1 package taco seasoning
- 1 pint sour cream
How To Make microwave nachos
-
Step 1Prepare ground beef and taco seasoning according to package directions. Be sure to drain off as much grease as possible when browning the meat.
-
Step 2Meanwhile, put tortilla chips on a large microwave-safe platter. Sprinkle with meat mixture. Dab on refried beans. Sprinkle on cheeses, onion, and jalapeños.
-
Step 3Microwave at medium (50% power) about 2 minutes. Watch carefully. Microwave just until the cheeses loose shape and start to run together and nachos are steaming.
-
Step 4Carefully remove from microwave. Let stand one minute and serve with sour cream or salsa on the side. Plate will be HOT!
