Ingredients
- FOR THE MEATBALLS
- 12 ounces gd beef
- 8 ounces gd pork
- 8 ounces chicken
- 1/2 cup ricotta cheese
- 1/3 cup shredded parmesan cheese
- 1/2 cup panko bread crumbs
- 4 cloves garlic minced
- 2 large eggs
- salt and pepper
- ROASTED RED PEPPER SAUCE
- 1 small onion diced
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 15 ounces jar roasted red pepper drained
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon calabrain chilies
- 2 teaspoons sugar
- 2 tablespoons fresh basil chopped
- salt and pepper
How To Make meatball paradise with roasted red pepper sauce

Step 1For the Meatballs Preheat oven 400 degrees. Line a large baking sheet with parchment paper

Step 2Mix all the ingredients for the meatballs together. Roll into 2 inch balls and place on parchment lined baking sheet. Bake for 20 minutes.

Step 3While the meatballs are cooking make the sauce.

Step 4Put oil in a saucepan. Add the chopped onion and saute until translucent. Add the garlic and cook 30 seconds. Add the drained roasted red pepper and cook about 5 minutes. Add the lemon juice, chilies, sugar and basil. Cook 30 seconds then puree with an immersion blender or food processor until smooth. Season with salt and pepper
