Ingredients For meatball paradise with roasted red pepper sauce

  • FOR THE MEATBALLS
  • 12 oz
    gd beef
  • 8 oz
    gd pork
  • 8 oz
    chicken
  • 1/2 c
    ricotta cheese
  • 1/3 c
    shredded parmesan cheese
  • 1/2 c
    panko bread crumbs
  • 4 clove
    garlic minced
  • 2 lg
    eggs
  • salt and pepper
  • ROASTED RED PEPPER SAUCE
  • 1 sm
    onion diced
  • 1 Tbsp
    olive oil
  • 2 clove
    garlic minced
  • 15 oz
    jar roasted red pepper drained
  • 1 Tbsp
    fresh lemon juice
  • 1/2 tsp
    calabrain chilies
  • 2 tsp
    sugar
  • 2 Tbsp
    fresh basil chopped
  • salt and pepper

How To Make meatball paradise with roasted red pepper sauce

    For the Meatballs Preheat oven 400 degrees. Line a large baking sheet with parchment paper
  • 2
    Mix all the ingredients for the meatballs together. Roll into 2 inch balls and place on parchment lined baking sheet. Bake for 20 minutes.

    While the meatballs are cooking make the sauce.

    Put oil in a saucepan. Add the chopped onion and saute until translucent. Add the garlic and cook 30 seconds. Add the drained roasted red pepper and cook about 5 minutes. Add the lemon juice, chilies, sugar and basil. Cook 30 seconds then puree with an immersion blender or food processor until smooth. Season with salt and pepper
