This appetizer is always a winner!! in any party I went to...You can make it ahead of time, freeze and just fried it when you need it.

jicama or waterchestnuts, chopped
red bell pepper, chopped
green onion, thinly chopped
salt and pepper
lumpia wrapper at most oriental market
How To Make
Mix all ingredients except green onion and the wrapper. Try to mix it well for even taste, Then add the green onion, just mix it gently.
Put a spoonfull of mixed on the eggroll wrapper,and wrap it, according to direction on the package.
Put 1/2 a cup of oil on the skillet(deep fryer is ok too)let the oil get hot, start frying the lumpia (turn the heat to medium), brown both sides and put it on a strainer w/ paper towels.
